I'm doing a project for Spanish II outlining some of the important events in my life, one of which was a hiking trip with my father when I was younger. I'm wondering what the best way to say something along the lines of "Since then, he and I have hike much of the Appalachian Trail in the Southeast" is. Most of the trouble stems from the verb "hike". To the best of my knowledge, there is no Spanish verb for hike. Thank you for any help

Yes, you are right. There is not an exact term in spanish for the word to hike. Caminar would be a translation but it would be too general, as you may know to walk is the exact word for that. Perhaps it would be something like this:

"Desde entonces, él y yo hemos caminado bastante por el camino de los Montes Apalaches en el Sur Este "

Solo una pequeña corrección Southeast en español se escribe junto y con letras minúsculas, existen dos palabras: sureste y sudeste.

If you're talking about present perfect: 

"Since then, he and I have hiked much of the Appalachian Trail in the Southeast"

yo lo traduciría así:

Desde entonces, él y yo bastante hemos andado por el Sendero de los Apalaches en el sudeste.

* La regla  respecto a la mayúscula inicial al referirse a los puntos cardinales  me parece un tanto ambigua.
