I will be dealing with a couple of Spanish businessmen in a couple of weeks to sign a contract, what do people in Spain prefer? An informal treat or a formal one?

If they are your olders, in latin america i will say "usted". If they are your age is uncommon to say usted. But in Spain there are some people you treat the older by their names, like "Buenos dìas Julio", but when the time to use "tu" or "usted", they use "usted" with the older people.
You should wait for their decisicion about that. I mean, if they treat you formally, you should trate them formally. If they treat you informally, you can treat them informally.
In any case, if you have not a friendship with them, you'd better treat them in a formal way.
